In order to add the generic text mode printer in Windows 8 you have to dig around a lot more than earlier versions.

First press the windows key and type "control panel" and select it.

Then click "Hardware and Sound"

Then click Advanced Printer Setup.

Then click the button "The printer that I want isn't listed."

The select "Add a Local Printer or network printer with manual settings"

Select "FILE:Print to File"

Add the Printer Driver Generic Text Only

Type a Printer Name

Do not share this printer

Success.  You can now print documents to text files.
